Tourtière (French Canadian Meat Pie)

For this recipe, we make our own pie crust with this recipe, but store-bought pie crust works really well too!
Ingredients:
1 Pound of our Lean Ground Beef
1/2 Pound Lean Ground Pork
1 Onion finely diced
2 Cloves Garlic minced
1 Russet Potato peeled and cubed
1 Tsp Salt
1/2 Tsp Black Pepper
1/4 Tsp Ground Sage
1/4 Tsp Dried Ground Thyme
1/2 Tsp Ground Allspice
1/8 Tsp Ground Cloves
1/2 Cup Beef Broth or Stock
1 Double Pie Crust 9 inch
Steps:
1. Bring potato cubes to a boil in salted water. Simmer for 15 minutes or so until tender. Drain well and mash.
2. In a large skillet or pot, brown ground beef, pork, onion, and garlic until no pink remains. Breaking up with a meat masher or spoon.
3. Add remaining ingredients, including mashed potatoes, but excluding pie crusts.
4. Bring to a boil, reduce heat and simmer for 15 minutes or until thickened.
5. Do a taste test, but don't burn your mouth! You want to be able to taste this goodness later ;) We usually add a touch more clove and allspice because we love these flavours. Be careful not to add too much!
6. Remove from heat and let cool for 20 minutes or so.
7. Preheat oven to 425F.
8. Line a deep dish pie plate with the dough and add the meat filling.
9. Add top crust and seal edges with a fork or your fingers. Add a few slits to let steam escape. For a lovely golden crust like in the photos, do an egg wash on the crust before popping in the oven.
10. Bake for 45-55 minutes or until bubbly and crust is golden.
Let the pie sit for 10-15 minutes to allow the juices to reabsorb, and enjoy!
